Homemade muffins are ALWAYS a goodidea!

Recently, I ran up smack up against another one of those “this is the absolute best thing I have ever had in my life” moments. Briefly followed by a much clearer and somewhat sympathetic understanding of what it means to be a hopeless crack cocaine addict.
Lindsay is our resident Vegan pastry chef, so you know, when she bakes; it’s pretty much going to be healthy, and when the result is this delicious the experience borders on delirious.
Paying strict attention to the J H I mandate of producing work that communicates and functions in multiple dimensions, Lindsay understands the importance of texture and she carefully builds that into each of her creations. “You do that intentionally, don’t you?” Please say yes…
Wearing my saddest frown that ALWAYS elicited a yes from my mother, it was immediately obvious that asking for a timely remake was useless. My desperate request was answered by a painfully perfunctory “think six months and maybe I will surprise you sooner”. Ouch!
Well, OK, makes sense, she’s busy, she carries a heavy workload here and at the end of the day, I too, would be too fried to bake.
